One Pot Rajma Recipe / Rajma in a pressure cooker

Rajma Chawal served with cucumber, onion, and mung bean sprout raita.


use kidneys beans of your choice | pictured, is 250gms of white beans
soaked overnight? Rinse the beans and cover it with 4 cups of water, 
leave it at room temperature overnight.

           Ingredients

  •  onions  3 medium-sized
  •  tomatoes 3 medium-sized
  •  ginger  2 tsp 
  •  garlic  10 cloves
  •  green chillies 2
(all of the above ingredients should be finely chopped ) 



          Whole Dry Spices
  •  bay leaves 2
  •  cloves 10
  •  cardamom 1
  •  cinnamon stick 1inch
         
          Powder Spices
  • tumeric 1tsp
  • coriander powder 1tsp
  • cumin powder 1tsp
  • kashmiri chili powder 2tsp
  • hing / asafoetida 1/2 tsp (optional)
  • garam masala 1tsp
  • salt to taste


once you have all the ingredients ready, putting it in the pressure cooker takes very little time.



in the cooker over medium heat 2tbsp of ghee and 3tbsp of oil ( you can choose to do it just with oil or vice versa entirely)

lightly sauteing the whole dry spices to release its flavor in the oil.

add the onions, ginger, garlic, chillies and saute till translucent, as seen in the picture.

add the tomatoes, add in a pinch of salt, saute for 2 - 3 mins till it gets squishy ( cook until oil separates)

to the squishy tomatoes add tumeric, cumin, chili powder, coriander powder, hing

after sauteing it for 2mins the mixture should like this. to this add the soaked kidney beans and use the same container to measure the water needed for the gravy ( depends on how thick or thin you want the gravy to be)

before you close the lid on the cooker, add the garam masala and salt to taste. wait for 3 whistles and you're done :)
